I used to think my cookies were fine until my neighbor's kid said they tasted like sand
For years, my chocolate chip cookies came out flat and a bit gritty. I just figured that was my style. Last month, my neighbor's 8 year old took a bite and said, 'These taste like the sand at the beach.' That was my clue! I realized I'd been using melted butter straight from the microwave for every single batch. I watched a video from a baker in Austin and learned you're supposed to cream room temp butter with the sugar. My next batch was totally different, so much softer. Has anyone else had a simple tip that fixed a long running baking problem?

That butter temperature thing is a total game changer. Read an article once that explained how creaming makes tiny air pockets for lift. It's wild how one small change can fix everything.
