My kid's teacher said something about cookie dough that stuck with me
I was at a school bake sale in Portland yesterday and overheard the art teacher talking about her chocolate chip cookies. She said she always mixes the dough by hand, not with a mixer, because she can feel when the flour is just mixed in. I tried it today with my usual recipe and honestly, the texture was way better. The cookies didn't spread out as much and stayed soft inside. Has anyone else tried mixing by hand for certain things?

Totally get what you mean. I've noticed this with a lot of stuff, like making coffee or even fixing things around the house. When you do it by hand, you pay more attention and you just get a better feel for it. Machines are fast but they don't have that touch, you know? It's like we're trading speed for quality without even thinking about it. That teacher is onto something for sure.
