My sourdough starter was a total brick until a baker in Portland gave me one tip

I was trying to make sourdough for months and my loaves kept coming out dense. At a market in Portland, I showed a baker a picture of my starter and he said, 'That's not hungry, it's starving. You're feeding it once a day in the fridge, right? That's your problem.' He told me to take it out, feed it twice a day with 100 grams each of flour and water for three days straight before baking. I did exactly that and my next loaf actually had an open crumb. Has anyone else had to completely change their feeding schedule to fix a starter?

Honestly, that "starving not hungry" thing is so real. I had to do the same rescue feedings for mine and it totally woke up.

Nah, that sounds like way too much work. I mean, my starter lives in the fridge and my bread turns out fine.
