PSA: I used to think you could just eyeball the water for sourdough starter
After my starter in my Portland kitchen went completely flat for the third week in a row last month, I finally got a cheap kitchen scale and realized I'd been using almost double the water the recipe called for.

Yeah, that's a classic mistake right there. My starter was a total brick for weeks until I did the same thing. The scale changed everything because my idea of a "cup" of flour was way off. Turns out I was packing it in like brown sugar without even realizing. Now my starter actually bubbles and grows like the pictures. It's wild how much of a difference a few bucks and a little exact measuring makes.

Oh man, @charles_green, you're so right. I fought my starter forever before getting a scale. It just makes the whole process way more reliable. No more guessing games.
