That bakery invoice in Boston made me double-check my flour order

I was helping my cousin set up her new kitchen last week in Boston and I saw her last invoice from a wholesale supplier. The total was $840 for 12 bags of flour, and I nearly dropped my phone. Turns out she was ordering a specialty blend marked up almost triple the normal price, but the supplier never told her there was a cheaper alternative with nearly the same protein content. I make bread at home and I never thought about checking unit prices per pound until that moment. Now I look at every ingredient cost two or three times before I commit, even for my simple sourdough. Has anyone else caught a supplier or store charging way more for a similar product that bakes just as well?
