Update: hit 13 failed meringues before one finally held, and the number taught me more than the win
I started counting fails in a notebook back in January, mostly to stop feeling crazy, and last Tuesday the tally hit 13 flat. That 13th batch was the one where I finally stopped guessing and weighed the sugar instead of scooping it, and the peaks actually stayed up when I lifted the whisk. Looking back, batches 4 through 9 all failed the same way, a greasy bowl I kept reusing because I thought a quick rinse was enough. If you've got a fail streak going, what number made you change one small thing instead of quitting?
