Warning: my wife's grandma in Toledo told me my bread was too pretty to eat
I brought two loaves of sour bread to her 80th birthday party in Toledo and she grabbed the crust of one and just held it up to the light. She said her own mother baked every Sunday for 40 years and never once got a crumb that soft, then asked what I changed. I admitted I quit following the recipe's 8 minute knead and started going by feel until the dough fought back a little. She nodded like that was obvious, and I have not touched the timer since.

Going by feel until the dough fights back is the whole secret and nobody wants to hear it. Grandma knew. That crust hold up to the light thing is a test I'm stealing.
