Shoutout to the old guy at Hartley's Diner in Tulsa who told me to skip the breakfast rush
I grabbed a stool at Hartley's Diner in Tulsa around 8am on a Saturday and the place was packed shoulder to shoulder. The guy next to me, must have been 70, leaned over and said the cook does his best plates at 10:30, right after the church crowd clears out and the grill gets a good season on it. I went back the next Saturday at 10:30 and got the same biscuits and gravy for $7 with no wait and it actually tasted better. Now I want to know what other spots have a sweet spot on the clock that nobody talks about. Where in your town is the food way better if you show up at a specific time?
The part about the grill getting a good season on it makes total sense to me. There's a taqueria near me that's open from 7am till 2pm, and the carne asada is fine in the morning. But around 1:15, once the lunch wave dies down, they throw the leftover bits on the flat top and let them get crispy, and the tacos turn into something completely different. I started timing my Fridays around that and I swear the same $9 plate tastes twice as good.
